Red Hot Chicken

I come bearing another favourite recipe. This one is all about Franks Red Hot sauce. I am obsessed to say the least with this sauce, I put it on a lot of my dinners (weird, I know). This recipe was inspired after I ate in TGI’s one evening and had the boneless bites to start.  That name for them could be wrong but think of battered chicken chunks smothered in hot sauce. They were FRICKING AMAZING so I wanted to be able to make something a bit similar that I can have for lunch or dinner whenever I like.

It’s not a very difficult one to follow but does require that little bit of extra prep time. Honestly though, its all worth it in the end.  I went through a phase of making this weekly and then all of a sudden stopped and I don’t know why, any time I make it, I enjoy it more and more.  I usually keep it simple and just make a jacket potato and salad with it.

I will admit if spicy and hot food is not for you, this may not be your favourite thing but you can make the sauce less spicy.

To make this chicken & sauce (this will be enough for two) – You will need:

  • 2x Chicken breasts
  • 1 cup of plain flour
  • 2x Eggs
  • Franks Red Hot Buffalo Sauce (I use about half of a 148ml bottle)
  • Butter (1 big spoon – use more butter if you want the sauce less spicy)

To do:

  1. Pre heat your oven at 180 degrees.
  2. Cut the chicken up into chunks.
  3. Beat the eggs in a bowl.
  4. Coat the chicken bits with flour.
  5. Dip the floured chicken bits in the egg and wet all sides.
  6. Coat them again with flour (completely covered).
  7.  Coat your frying pan with enough oil to mostly cover the bottom and heat to a medium high temperature.
  8. Once the oil is to temperature place the chicken bits into the hot oil. They should start sizzling right away. Just let each piece cook for one minute on each side. (you just want to seal them, not cook them fully).
  9. Place each piece into a oven proof dish.
  10. In a small saucepan, pour your franks red hot in with the butter (at a medium heat) and stir until the butter has fully melted.
  11. Pour the sauce over the chicken and mix around until all the chicken is coated.
  12. Cover the chicken with tinfoil and cook at 180 degrees for 45 mins.
  13. Take out once the chicken is cooked and enjoy!
